First of all you can read all the information about e-Health sensor platform in this link:

-What are the units that shows each sensor?

SPO2 → percentage of Oxigen saturation in blood
ECG → Electrical and muscular function of the heart (Volts)
Airflow → Breathing rate
Temperature → degree Celsius (ºC)
Blood pressure → Sistolic (mm Hg), Diastolic (mm Hg) and pulse.
Position → 5 positions (standing/sitting, supine, prone, left and right)
GSR → Electrical conductance (Ohm)
Glucometer → Concentration of glucose in Blood (mg/dL or mmol/L)
EMG → Electrical potential generated by muscle cells (Volts)

-Can I use all the sensors at the same time?

You can use all together but glucometer and blood pressure can't work together, ECG and EMG can't work together.

-Can I make some calibration to improve the accuracy of the sensors?

The temperature sensor and GSR can be improved by some measures with the multimeter and after make some easy changes in the libraries. The EMG sensor can be calibrated with the gain potentiometer. All the instructions for calibration are in the e-Healt tutorial.

-ECG sensor is attached to the board and value received are always the same with or without electrodes attached to the body ¿What's wrong?

Check the EMG/ECG jumper position.

-The SPO2 sensor shows the values on the LED screen but on the compunter only show the bpm value.

You should download the new libraries that fix this issue clicking here.
-eHealth library for Arduino 2014 version with special function for SPO2 sensor
-eHealth library for Arduino

-It's possible to measure and show the values in the computer at the same time with the glucometer and blood pressure sensors?

This feature it's not implemented
